公众对食品安全教育了解程度及影响因素分析

Status and influencing factors of knowledge about food safety among citizens in China: a cross-sectional survey

      目的  分析公众对食品安全教育的了解程度和影响因素,为提高食品安全教育质量提出建议。
      方法  2016年12月 — 2017 年3月,采用多阶段分层随机抽样方法,抽取全国4 575名受访者进行问卷调查,并运用单因素分析和多元线性逐步回归分析方法进行统计分析。
      结果  有效调查4 408人,公众对于食品安全教育相关知识的了解程度较低,总均分为(9.10 ± 4.40)分。对食物的营养知识了解程度得分为(2.20 ± 1.07)分,对食物的安全知识了解程度得分为(2.03 ± 1.04)分,对食物的烹饪知识了解程度得分为(1.98 ± 1.08)分,对食品安全教育的内容了解程度得分为(1.58 ± 1.14)分,对《食品安全法》的内容了解程度得分为(1.32 ± 1.18)分。单因素分析结果显示,不同常住地、年龄、文化程度、家庭人均月收入的公众食品安全教育相关知识了解程度差异均有统计学意义(P < 0.05)。多元线性逐步回归分析显示,文化程度(|βx| = 0.080,P < 0.001)是影响公众对食品安全教育相关知识了解程度的重要因素。基于多元线性回归结果的Ridit分析显示,不同文化程度的公众对于食品安全教育的关注程度不同,文化程度由低到高Ridit值分别为0.456、0.503、0.518、0.543。
      结论  公众对食品安全教育的了解程度水平存在差异,其中文化程度是影响公众对食品安全教育相关知识了解程度的主要因素,公众文化程度越高,对于食品安全教育相关知识的关注程度和了解程度越高。

     

    Abstract:
      Objective  To analyze the status and influencing factors of food safety related knowledge among citizens in China for improving health education on food safety.
      Methods  A self-administered questionnaire survey was conducted among 4 575 citizens recruited with stratified multistage random sampling in 60 county/district level regions across China from December 2016 to March 2017. Univariate factor analysis and stepwise multivariate linear regression analysis were used in the study.
      Results  For the 4 408 respondents with valid information, the knowledge about food safety was at a low level, with an overall score of 9.10 ± 4.399 and the domain scores of 2.20 ± 1.066 for nutrition, 2.03 ± 1.044 for safety, 1.98 ± 1.076 for cooking, 1.58 ± 1.135 for content of food safety education, and 1.32 ± 1.180 for laws and regulations on food safety, respectively. Univariate analysis indicated that the level of knowledge about food safety differed significantly by permanent residential region, age, education, and monthly household income per capita (P < 0.05 for all). Stepwise multivariate linear regression analysis indicated that education level (|βx| = 0.080, P < 0.001) was an important factor affecting the knowledge about food safety. Multivariate linear regression-based Ridit analysis resulted in the Ridit values of 0.456, 0.503, 0.518 and 0.543 for the grade of attention on food safety education for the respondents with the academic certificate of junior high school and below, senior high/vocational school, collage/university, and master degree and above, respectively.
      Conclusion  The knowledge about food safety differs and is mainly associated positively with education background among citizens in China.
