烹调油烟雾中有机成分的分析

Analysis on Organic Compounds of Cooking Oil Fume

  • 摘要: 目的了解烹调油烟的有机成分组成。方法应用气质联用技术对烹调油烟雾颗粒和挥发性有机物进行了全谱分析。结果共检出196种物质,包括脂肪烃类、多环芳烃、有机酸、硷、酯、醛、酮、醇以及杂环化合物。结论烹调油烟雾中的有机成分绝大多数对人体有害。

     

    Abstract: ObjectiveTo determine the pollution of organic compounds of cooking oil fume.MethodsThe gas chromatography-mass spectrometry(GC-MS)was used to detect the organic components in the cooking oil fume.ResultsOne hundred ninety nie were sorts of polluttants were detectexlincluding hydrocarbons,polycyclic aromatic hydrocabons,organic acid,alkali,eater,aldehyde,ketone,and heterocyclic compunds.ConclusionMost of organic compounds of cooking oil fume had harmful effect on human health.
