食品能量自动量热仪测定方法建立及评价

Auto-calorimetric measurement of food energy density

  • 摘要: 目的 探索建立自动量热仪测定食品能量的方法及评价.方法 称取1g样品及苯甲酸标准物,置于自动量热仪氧弹的坩埚中,再加入10ml水于氧弹内.在密闭及充足氧气的条件下,点火令样品燃烧后,使水温升高,显示结果,在操作质量合格的前提下,检测8种包装婴幼儿食品,采用自动量热仪进行测定食品能量.同时采用计算法测定食品能量,并进行比较.结果 2种方法测定食品能量(16.83~21.34MJ/kg与16.10~19.44MJ/kg)差异无统计学意义,可互相代替.被检食品能量均合格.结论 应用自动量热仪检测食品能量的自动化程度高、操作简便、灵敏和准确.

     

    Abstract: Objective To measure food energy density directly by auto-calorie eter and evaluate the results.Methods One gram sample and the benzoic acid standard were put in cmcible,and lOm Iwaterwas added in the oxygen bomb of the auto-calorimeter After burning the sample under heunetic and sufficient oxygen condition the resultwas displayed Under strict quality control,the energy density of 48 samples including 8 kinds of infant food were detected.Results There was no significant difference bettween the two sets of the results(16.83-21.34MJ/kg and 16.10-19.4MJ/kg).All samples detected were of good quality in energy density.Conclusion Auto-calorieeter application in food energy measurement is a high automatic,simple procedure with excellent accuracy and sensitivity.
