Abstract:
Objective Iodine content of some foods marketed in Tianjin City was measured.That can be used as a database for the safety assessment of the iodine nutrition situation of the people living in Tianjing city and the study of the joint action of the selenium and iodine on the health.
Methods The samples were collected from the markets in 6 districts of Tianjin city and the iodine content of the foods was determined using the kinetic spectrophotometry based on iodine-catalyzed Ce
4+-As
3+ redox reaction.
Results The iodine content(
x±s)of the vegetables,cereals and dried legumes,terrestrial animals were(4.2±3.16),(7.6±6.15)and(20.1±20.54)μg/100 g,respectively.One of the dried kelp was(4263.6 ±1895.05)μg/100 g.
Conclusion The mean valuesof the food iodine content could vary with the kind of the foods.The iodine contents of specimens of the food from different source maybe different.Because of the iodine content of the dried kelp is higher about two hundred times than one of the plants and animals,so that the dried kelp is a good food adjusting the dietary iodine intake.
