僧人营养状况的研究

A Study on Nutritional Status of the Buddhist Population in The Area of Wu-Tai Mountain

  • 摘要: 对五台山63名僧人(和尚、喇嘛、尼姑)的营养状况研究结果表明:僧人摄入的能量及各种营养素,除VB1、Fe外,其他均不足。尤其是蛋白质、Ca、VA、VB2、VC、Zn.生化检验,血中总蛋白、血红蛋白VA、VC、Cu、Cu/Zn均不同程度低于正常值,.除个别喇嘛外,绝大部分僧人血中胆固醇、甘油三酯在正常范围。4小时负荷尿中VB2、VC严重不足。血清总蛋白、VA不足和贫血以和尚、尼姑较重,而VC不足和甘油三酯超过正常值则以喇嘛较重。体检中僧人有10%左右出现VA、VB2、VC缺乏病。另外发现在蛋白质摄入不足的情况下,摄入20%以上的优质蛋白质能有效地减少血清总蛋白的不足和贫血。摄入脂肪以植物性脂肪为主时,可以降低血中胆固醇和甘油三酯含量。

     

    Abstract: The nutritional status of 63 Buddhist population(Monks Lamas and Nuns) in the area of Wu-Tai Muntain were investigated. The result showed that the intake of energy and all nutrients was less than RDA to varying degrees. Especially in protein, calcium, retinol, ribofiavin, ascorbic acid kand zinc were greatly lacking. Serum levels of total protein, hemoglobin, retinol, ascorbic acid, copper and coper/zinc were less than the normal respectively. Almost all Buddhist population's contents of cholesterol and tiglycerides were underthe normal, except that a few lamas. In urinary loading testriboflavin and ascorbic acid were seriously inadequate. Furthermore the anemia and the insufficiency of total protein andretionl were seriously displayed in Monks and Nuns, while theinsufficiency of ascorbic acid and the exceeding the normal of trig y cerides were seriously showed in lamas. The result of anthropometry showed that about 10% people among the Buddkhist population suffer ded from dificiency diseases of retinol, riboflavin and ascorbic acid. Besides, the insufficiency of total profein and the rate of anemia could be effectively reduced if intake of over 20% of high-quality protein could beretainedon on condition that the intake of protein was under RDA. Contents of cholesterol and trigly cerides may be redued when the fat was took in was mainly vegetable fat.
