上海市区居民的膳食营养状况及其对策

The Status of Diet and Nutrition in Shanghai Urban Citizens and the Countermeasure

  • 摘要: 于1996年对上海市区居民进行了膳食调查?结果表明:能量的摄入比较充足,每标准人日摄入能量10144kJ,达供给量标准的101.3%;蛋白质摄入量为84.7g,为供给量标准的110.1%;矿物质中,钙的摄入量仅为598.9mg,为供给量标准的72.0%?维生素中,老年组视黄醇当量摄入量不足,儿童和青少年组核黄素摄入量不足?膳食构成,蛋白质提供的能量占总能量的13.9%,优质蛋白超过50%;脂肪提供的能量占总能量的32.8%,超过建议值的高限?上海市区居民的膳食营养状况已发生明显变化:粮食消费呈下降趋势,动物性食物增长迅速;碳水化合物摄入量减少,脂肪和胆固醇的摄入量增加;某些营养素摄入不足和过剩同时存在?迫切需要加强对居民的营养指导?

     

    Abstract: We carried out a dietary survey in Shanghai urban citizens in 1996. Main result are presented as follows:The average consumption of energy was 10144 K J per reference man per day, constituted 101.3% of the RDA. The average consumption of protein was 84.7g per ref erence man per day,constituted 110.1% of the RDA. In mineral, the consumption of iron and selenium was adequated. The calcium intake was only 598.9mg, constituted 72.9% of the RDA. Invitamins,the consumpt on of vitamin E, nicaction, ascorbic acid and thiamine was adequated. In groups older than 60 year, the retinol equivalent intake was low. And in groups below 18 year,the riboflavin intake was low. Protein energy accounted for 13.9% of the total energy and high quality protein surpassed 50% of the total.Faten ergy accounted for over 30% of the total energy and animal fat accounted for below 40% of the total.The results indicated that the dietary and nutritional status of Shanghai urban citizens were changed significantly.More animal food, fat and cholesterol, and less cereals and carboh ydrates were consumed. Deficiency and excess of some nutrients coexitenced. It is essential to reinforee nutritional consultion for urban citizens so that they can modulate the diet structure.
